Architecture & cellar

The architecture of the St. Michael-Eppan Winery is far more than a functional framework – it is the spatial expression of our philosophy.

Historic cellar spaces, modern structures and precisely designed work areas blend seamlessly, creating an environment where tradition and innovation become visible and tangible.

In the cellar, the transformation of the grapes is brought to completion, as tradition meets innovative winemaking technology. “Respect for the grape”

is our guiding principle and the essential prerequisite for producing long-lived, expressive wines.

The grapes are vinified with rigorous attention to the characteristics of each vineyard, allowing their distinctive qualities to be fully expressed.
The wines are then matured in steel or wooden barrels to highlight their individual character.

APPIUS CELLAR

The cellar is distinguished by an immersive, almost sacred atmosphere. The tiled walls echo the style of the historic cellar and frame the distinctive truncated-cone stainless steel tanks with a satin bronze finish, specially designed to ensure the highest quality during the maturation of Appius.

BARRIQUE CELLARS

Since the 1980s, the white and red barrique cellars have held a special place at the heart of the Winery. Here, a selection of our finest wines matures in small French oak barrels.

LARGE OAK BARRELS

Today, as in the past, the traditional maturation of wines in large oak barrels continues to play an important role at St. Michael-Eppan Winery. For this reason, the historic cellar has been completely renovated in recent years and now houses more than 50 large oak barrels.

STAINLESS STEEL

Stainless steel is indispensable for modern winemaking. It is the ideal material for both fermentation and storage tanks, ensuring the highest standards of hygiene and cleanliness. Stainless steel allows for the precise handling of must and wine, preserving and enhancing the freshness and aromas of the different grape varieties.

GRAVITY-FLOW CELLAR AND GRAPE RECEPTION AREA

The 30,000 m³ gravity-flow cellar, completed in 2020, enables us to ensure the modern and efficient reception and processing of our grapes. We are able to optimise diversification and process the different grape qualities separately and quickly, preserving the quality of the fruit.
