In 2010, the APPIUS project was launched at San Michele Appiano Winery. In autumn 2014, the first vintage of this special wine, produced in limited quantities, was presented to the public for the first time.

The aim of the project is to express the best of each vintage through a cuvée composed of Chardonnay, Pinot Grigio, Pinot Bianco and Sauvignon. The composition varies depending on the vintage and, to underline its uniqueness, the label is redesigned every year.

The individual grape varieties are aged separately in small wooden barrels. After 12 months, the final assemblage takes place; the wine then matures for a further three years in special stainless steel tanks on the fine lees before bottling.

Within a few years, the APPIUS project has established itself both nationally and internationally, becoming a benchmark for South Tyrolean white wines.

The available quantity of APPIUS is strictly limited and allocated to selected customers. Since the first vintage, brand awareness has steadily increased, and the winery’s objective remains to strengthen its importance over time in a sustainable and long-term manner.

To achieve this goal, not only excellent grape quality is required, but also dedicated facilities for vinification and ageing.

With the construction of the new grape reception and processing area, and the relocation of the former press room, it became possible to build a dedicated APPIUS cellar in close proximity to the barrique cellar.

The new cellar has been built according to the latest technological standards and provides space for several stainless steel tanks of different sizes. At its center, a small tasting room has been created for exclusive tastings.

All tanks are made of double-walled stainless steel, ensuring ideal conditions for the storage and ageing of APPIUS. The proximity to the barrique cellar also facilitates and optimizes wine transfers.

Construction works started immediately after the 2023 harvest and were completed in early summer 2024.
